Fresh Strawberry Pie

1½ quarts fresh strawberries

1 cup sugar

3 tablespoons cornstarch

2 tablespoons lemon juice

1 cup whipping cream

Baked 9-inch pie shell


1Wash berries and remove caps. Reserve about half the berries, the largest and best-colored ones. Mash the rest of the berries. Add the sugar and cornstarch that have been mixed together. Place over medium heat and cook until smooth and thick, stirring constantly. Stir in lemon juice. Cool.

2Add the whole berries to the cooled mixture, saving a few for garnish, if desired. Pour into pie shell. Chill until set. When ready to serve, whip the cream and spread over pie. Garnish with whole berries.
