Coconut Cream Pie

Ingredients

2/3 cup sugar

½ teaspoon salt

2½ tablespoons cornstarch

1 tablespoon flour

3 cups milk

3 egg yolks

1 tablespoon butter

1½ teaspoons vanilla

1 cup flaked coconut

Directions

1Mix dry ingredients. Add milk. Cook on medium heat until mixture boils for one minute. Remove from heat. Add small amounts of hot mixture to egg yolks, stirring each time. Combine and reheat until mixture boils for one minute. Remove from heat. Add butter, vanilla, and coconut. Cool. Pour into baked pie shell. Chill. Top with whipping cream before serving.
