If you are in a rush, you can skip beating the egg whites separately. I used to do this, but now I am convinced it is worth the extra effort. To make wheat waffles, use wheat flour instead of white flour and use honey instead of sugar.
2½ cups flour
½ teaspoon salt
4 teaspoons baking powder
1 tablespoon sugar
½ cup melted butter
2 cups milk
1 teaspoon vanilla
4 eggs, separated
1Whip egg whites to soft peaks.
2In a separate bowl, mix flour, salt, baking powder and sugar.
3Mix in milk, egg yolks and vanilla.
4Mix in melted butter.
5Fold in egg whites.
6Use 7/8 cup batter per waffle. Makes about 6 Belgian waffles.
