Banana Bread

½ cup shortening

1 cup sugar

2 eggs

1 cup mashed bananas

1 teaspoon lemon juice

2 cups flour

1 teaspoon baking soda

½ teaspoon salt

¾ cup nuts

powdered sugar, if desired


1Cream shortening and sugar.

2Add one egg at a time, then add banana and lemon juice.

3Sift flour, baking soda and salt together and add to batter.

4Mix well and fold in nuts.

5Bake 350° for an hour or less. Test center with toothpick. When it comes out without batter on it, it is done.

6Cool. Sprinkle with powdered sugar if desired.
